We’re committed to lowering the journey time our seafood takes from when it is caught to when it arrives on your plate, ensuring the freshest quality possible.
As a family-run business celebrating 25 years in Borough Market, we are looking thoughtfully ahead at each and every way in which we can continue to build on our expertise to champion locally sourced, British produce across our menus.
The majority of our fish and seafood is sourced directly via auction (every morning) from Brixham Fish Market in Devon. Buying in this way gives us 100% traceability to the boat from which it was caught each morning and means we can get fish from the sea to your plate in less than 48 hours. We are one of very few restaurants in London that operates in this way.
On top of this, by working with highly regarded suppliers and fishermen with the strictest welfare standards, we can ensure our fish is sustainably caught. The beauty of sourcing with seasonality in mind is that we can explore a wider range of fish species available within our shores, and change our menus more frequently to reflect that.
Crafted by our exec chef, Frankie van Loo, our menu features a monthly-changing selection of the freshest seafood, dictated by what lands on the Devon and Cornwall dayboats each morning.

25 YEARS OF APPLEBEE’S FISH.
We are extremely proud to celebrate 25 years in Borough Market with the relaunch of our restaurant on the iconic Stoney Street.
Still fully independent and family-run, we started as a fishmongers in the market before our founders, Joy and Graham Applebee, then moved into their first bricks-and-mortar seafood restaurant.
Their expertise has been passed down through the generations to their son, Jack, who’s been a part of the business for the past 10 years and spearheaded the relaunch alongside his two brothers.
On top of a total refresh of our physical space and brand, we brought in Frankie van Loo as Exec Chef to craft a new menu to reflect our values and mission.
Whilst we remain committed to sourcing the highest quality seafood, we now have a focus on full traceability and sourcing directly from fishermen at Brixham Fish Market.
This allows us to spotlight premium British seafood and present timeless dishes and flavours.
